Egg Tarts

Nowadays, to get a nice and traditional egg tarts are not easy.  And tarts has to to be eaten while it is hot from the oven. I decided to give it a try and i'm glad that it turn out nice, fragrant and crispy but then it slightly burn.  As for the pastry, it doesnt look pretty but i will definitely try it again. Practice make perfect. :).

Mango Chiffon Cake

As i still have some leftover riped mango, i decided to bake chiffon cake as it has light and soft texture that my family love.  I replaced pandan juice and coconut milk with mango puree, water and mango essence.  The rest of the ingredients remain unchanged.

Pork steak tempura

This is a great deep fry pork tempura, recipe is from women's weekly magazine but i did some changes. after deep fry is crunchy but after half an hour it turn soft but is still very yummy. especially dip with mayo or chilli sauce.. This is one of my son's favourite dish.

huhhuh.. this is a simple healthy dish yet delicous. you can just steam it or pan fry it.. taste so yummy.
using a prenium scallop sauce with some Hua Tiao wine, seasame oil and pepper. that it.

Mango Pudding

My colleagues has given me some mangoes and i have made this mango pudding for their tea break.  The sweetness of the mangoes made the dessert tasteful and sinful.  Yummy...

Mango Pudding @ Sugabakes

Recipe
-------
Ingredients
2 ripes and sweet mangoes
1 sachet of gelatine
1/4 cup of hot water
1/3 cup of sugar
250ml of fresh coconut milk

Methods
---------
1) blend the mangoes till puree and set aside.
2) heat the water till boil and sprinkle the gelatine and stir till its dissolve.  Remove from heat.
3) Add the mangoes puree and coconut milk to the gelatine mixtures and mix well.
4) Pour to cups or moulds and leave in the fridge to set for 2 hours or overnight.  Serve.

Marble Cake (2)

Since i have left some dark chocolate, i decided to bake this marble cake for my children to bring to school for their tea break.  but I have slightly overbaked it and the texture feel dense and dry.  However, the cake turn out nice and fragrant.

Orange Cornflakes Cookies

My children requested again to bake their own cookies.  As to pass time, i agreed and let them have fun weighing the ingredients and kneading the dough.  This orange cornflakes cookies are easy to make and it has orange fragrant and crispy crashed cornflakes.  My children enjoy eating it and requested to bring some to school for their tea break.

Kuih Wajek (Glutinous Rice Pudding)

Kuih wajek is a favourite malay teatime snack as it has the fragrance of coconut milk, pandan leaves and the natural sweetness of palm sugar (gula melaka).  This is my first try making it and my family and myself just love it and couldnt stop having it.  if you have a sweet tooth, this one is for you. (recipe as below).

Recipe
-------
Ingredients
1/2 cup water
300g palm sugar, cut into pieces
60g sugar
3 pandan leaves
600g glutinous rice, soak overnight
pinch of salt
2 cups thick coconut milk

Methods
---------
1) put water, palm sugar, sugar and pandan leaves in a saucepan and stir over low heat until sugar dissolves.
2) Line the base of a steaming tray or cake tin with pandan leaves (cut into 5cm long).  Spread glutinous rice over pandan leaves and steam for 45 mins.
3) Add salt to coconut milk.  Mix steamed rice with coconut milk and cook over low heat, stirring continuously till mixture becomes thick and oily brown.
4) Allow to cool and harden.  Cut into 4cm squares and serve.

Cheese Chiffon Cake

This recipe was from at one of the blog.  i forgot what the name of the blog (thanks for the recipe).  This cheese chiffon cake is soft and fluffy but the cake is not sweet enough.  will add more for my next baking.
