Snowskin mooncakes with white lotus paste

Mooncake festival is around the corner, and every one is busy baking and packing to give away to their loves one. Me, no exception also busy making snowskin mooncakes for my parents, in laws and relatives. As i have no time to buy other favour paste, i just stick on white lotus paste and durian paste to make this traditional snow skin mooncakes.

Oreo Cupcakes

My son's preschool has organised a trip to science centre, and my son has requested me to bake some cupcakes for him for his snacks. As chocolate is his favourite, i baked mini cupcakes full of crashed oreo biscuits. He enjoyed himself very much and finished all the cupcakes that i packed for him. :)

Recipes

Ingredients
1) 230g unsalted butter
2) 230g caster sugar
3) 4 eggs
4) 230g self-rising flour
5) 100g oreo biscuits, chopped
6) 30g raisins (optional)

Method
--------
1) Preheat oven to 175c.  Place paper baking cases in muffin tins.
2) Combine butter, sugar, eggs and flour in a mixer and beat until smooth and pale.
3) Stir in oreo biscuits and raisins and spoon batter into the cases. Bake for 20 mins or until well done.
4) Remove from oven and cool for 5 mins.  remove the cupcakes and cool on rack.

Coffee Cookies

Since i love to drink coffee, i decide to try out making coffee cookies. I used nescafe powder as it has nice aroma favour. It turn out to be crispy and has wonderful smell. I must thanks the author of this recipe. If you wish to order, please refer to my order list and price. Thank you.

Orange and Milo Cupcakes

Cupcakes are always children's favourite. Over the long weekend, i have baked two types of mini cupcake favours. One is milo and the other is orange. The taste is great and the texture is soft and moist. My elder son love it and requested me to bake more, so that he can bring to school for his tea break. And also brought some to my mum place for my nieces to eat too.

Recipe
-------
Ingredients
1) 100g Butter
2) 100g Castor sugar
3) grated rind of 1 orange
4) 2 eggs
5) 100g self-raising flour
6) 1 tbsp fresh milk


Method
--------
1) Line the muffin tin with paper cases. Cream butter and sugar together until very pale in colour, light in texture and fluffy. beat in the orange rind and the eggs, one at a time, adding 1 tbsp of flour with each egg.
2)Fold in remaining flour and stir in milk
3) fill the paper cases with batter and bake for 20 min @ 175c or until golden brown. cool on wire rack.

Last few days ago bought a packet of grated cocount and was still sitting in my fridge. I bought this cocount mainly for making onde onde but decided not to as it is too time consuming. So I make this simple, nice and traditional kuih for my family.

Soya Bean Almond Jelly

Almond jelly with longan dessert is always people's favourite. you can easily purchase any of the supermarket outlets for the instant almond powder. but this time i try out by using fresh ingredients to make soya bean almond jelly with longan. The texture is a bit different as the instant almond powder but when mix with longan and cocktail, it really taste great.

Recipe
---------
12g agar agar powder
41/2 cup soya bean
1/2 cup evaporate milk
1 tsp gelatine
60ml hot water
120g sugar
1 tsp almond essence

Method
----------
1) Boil the soya bean with agar agar powder and sugar. boil until the suga has dissolved.
2) mix gelatine and hot water and mix well.
3) add gelatine mixture, evaporate milk and essence into soya bean mixture and stir well
4) transfer into jelly mould and put in the fridge after cool.

Non-baked Mango Cheesecake

As i still have left a few riped mangoes and my colleagues has requested me to bake a mango cheese cake. Here is the mango cheese cake... I have added a lot of chopped mangoes and made some deco on the cake to look more appetite and beautiful. Even thou the deco is simple but every one of us enjoys it very much.
