Mango Ice Cake

Tomorrow is my dearest brother, birthday.  Every year i will try to bake him a cake to celebrate with family.  This year no exception, i have decided a simple mango ice cake.  Using my Durian Ice Cake recipe to replace with Mango.  As it was not mango season, the mangoes do not taste great but we enjoy the cake very much.  Happy Birthday, Bro!

Oreo Cheesecake

Today is my nephew's birthday and since he loves mangoes, i have decided to bake him a mango cheesecake.  But to my disappointment, i cant managed to find any from supermarkets and fruits stall.  left with no choice and time consuming, i need to replace with other ingredients which i have in fridge. And it will be oreo cheesecake.  :)

July Birthday Cake

This month we celebrated the most birthday.  4 of my family members birth date are fall on July.  It quite a headache to think what to bake for their birthday. Haha... My twin sister, find that it a bit too tiring for me to bake and advised to buy from outside.  Nowadays Cakes are not as cheap as what we thought and somehow we can reduce the sugar added and using the good qualities of ingredients.  So here are the cakes that i have baked for my dear mummy and kids... The Ice Cream Cake did not turn out well as its melted fast once it was placed outside. :(  But the Kids enjoyed themselves v much.

Muah Chee

This weekend was a busy day for me as i was making nonya dumplings for my parents and also intended to make some dessert for my family.  But since my mum has already cooked green bean soup and my family and nephews have got tired of my banana fritters, i decided to make something new for them, Muah Chee...  Kids just love Muah Chee as it has chewy texture and fragrant of  the peanuts.  I found that using instant ground peanuts is easy and the peanuts are as nice as homemade.  My family and nephews love it and finished all within few minutes.  :p.

Mango Cheesecake (2)

As i still have a block of cream cheese and sweet mangoes in my fridge.  i decided to make my colleagues' favourite dessert, Mango Cheesecake.  I have added agar agar on top of the cheesecake and chopped mango into the mixtures. The cake tastes wonderful...


Mango Cheesecake @ Sugabakes
Recipe
---------
250g cream cheese
100g sugar (i cut down to 70g)
200 mango puree
1 tbsp of gelatine powder - mix with 3 tbsp of hot water
150 - 200g of whipped cream
20g Fresh Orange Juice
chopped mango
agar agar (optional)

Agar Agar Mixture (optional)
---------------------
half pkt of agar agar powder
500g of water
mango colouring
- Mix all and boil till boiling.  after cool, pour into chilli cheesecake..  chilli for hrs till set.

Method:
1) Mix well the cream cheese with sugar till creamy
2) Add in Mango Puree and Orange Juice and blend it till well mix.
3) whipped up the cream and fold into the cream cheese mixture
4) Stir into Gelatine and chopped mango.
5) Chilli till set.

Durian and Mango Cake - Mother's Day

Last week, My elder brother, twin sister and myself have a discussion where to celebrate advance mother day for our dear mum and we came to a decision to celebrate at mum's place.  My mum as usual cooked our favourite dishes.  Since it a mother day, my twin sister decided to cook additional dishes, Stir fry Crabs with tomato sauces and Cereal Prawn for the kids.   We have an enjoyable meal, jellies and cakes for our dinner.

Broccoli Thick Soup

After since my family have tried my home made Pumpkin Soup, they requested to have other favour for their late lunch this weekend.  So i decided to try on broccoli soup using the same recipe as pumpkin soup. The taste is great when it was dipped with toasted garlic bread.

Pumpkin Soup of the Day

Today is a humid and hot day that my family and myself decided to stay indoors. My spouse was busying coaching my son's homework and his coming SA1(P3) exams.  whilst my girl looking around her toys cupboard to find something to play. As we had our late breakfast, my spouse requested to have light snacks for our lunch.  Looking thru my fridge, I still have a ripe pumpkin to be used.  As Pumpkin is rich in vitamins and high in fibres, I decided to cook this healthy soup to go with toasted garlic breads.  I browsed thru a few recipes and found Christine's blog recipe
I always taught that making of pumpkin soup is difficult but in fact, it simple and nice... thanks Christine for your yummy soup recipe.

Orange Chiffon Cake

Everyone likes Chiffon Cakes as its has different types of favours.  Each favour has their own textures, taste and fragrant.  I have baked countless of chiffon cakes and my favourite is always Pandan Chiffon cakes.  I loves the smell of the Pandan whenever it has been baked.  Orange is not my cup of tea but somehow I would like to give a try by using instant orange juices instead of fresh orange juice.  I used baking mum blog's cake recipe.. and replace coconut milk with orange juice. Recipe  
The outcome is nice and yummy... Give a try.

Fried Banana Fritters

Today i brought a bunch of riped banana to my mum's house and fried some Fried Banana Fritter instead Banana Balls.  To fry a fritter, the batter must be just right and smooth.  The sweetness of the banana and crispness of the fritter is just prefect.  But the crispness wont last long so it best to consume when it was still hot or warm. Thanks for the recipe from one of the food blog.

Glutinous Sticky Rice

After my twin sister's in-law had passed away, her family missed her specialize dishes very much, especially sticky rice.. They did learnt but somehow they are too busy to cook it.. On fine day, while my twin sister was cleaning her fridge, She found some leftover glutinous grain.  Without thinking twice, she decided to try out cooking the Glutinous rice added with mushroom and chicken.. the outcome didnt turn out well as she has added too much water.  But some how the food is still yummy.  Still, her in law receipe is still the best.

Fried Nian Guo with Taro

Nian Guo is always our family favourite.  My Mum will normally keep the Nian Guo instead of throwing it away after prayed.  She will store them in fridge for days, weeks, months or even years.  My sister or myself will help to clear her "stocks" by frying it with eggs batter mixture.  This is our first try by mixing the Nian Guo with smash steamed Taro and roll it with Popiah Skin.  Give it a try, you will love it.  :)

Birthday Cake - Oreo Cake

Today is my nephew's birthday and i have promised him to bake a cake for him.  As he loves chocolate, i decided to bake him a Oreo Cake and added chocolate frosting to make it more appetizer.
My nephew loves the cake so do my family.  Not a slice cake left :)
Anyway Happy Birthday to my dear Nephew, Fabian.  Wish you all the best in studies and sport.
