Dumpling Festival

Last Thursday is Dumpling festival day. Every where is selling fast due to the festival. Knowing that outside is selling @ higher price, i decided to make my very own dumpling. This is my first try and i not sure how to buy or start with the ingredients plus wrapping, so i try out by making the simple recipe "red bean dumpling". My first try of wrapping does not turn out well but it tastes really great.

Spiral Shape dumpling (after each wrap)

After boiled for 2 hours "red bean dumpling"
Recipe (A)
-------
500g glutinous rice - wash and soak overnight
2 tbsp alkaline water
4 tbsp oil
red bean (B)
-------------
150gram red bean - soak overnight
sugar - to taste
few tbsp of oil
Method (A)
1) drain away the excess water of the rice
2) add oil and leave it for 30 mins
Method (B)
1) boil the red bean till very soft
2) drain away the stock and add sugar
3) cook for a while till sugar dissolve
4) add oil and leave it aside
*Take Two banana leafs and wrap into spiral size or any pattern that you want
*add 3/4 of rice and 3/4 of red bean and lastly 3/4 of rice
*wrap into the shape and secure it with string.
*boil at medium fire for 2 hours. hang it up and leave it to dry.

Apple Quiches

My colleagues and myself just got to learn how to bake a Mushroom Quiches at one of the baking class. As i still have the leftover dough in the fridge, i decided to bake it and instead of mushroom, i added apples with crispy crumble. It turn out nice and crispy.

My 4 and half year old son is bored of having sandwiches during school tea break time. So i decided to bake this mini marble cupcake for him. He find it cute and love the smell of the chocolate that he asked for more to bring to school and eat.

Mother's Day Special

Last sunday is mother day, we decided to make something nice for our dear mum to show our appreciation. Our mum loves something special ,sweet and traditional, so we decided to make 'Huah Kueh', colourful cocount agar agar and lastly, Pizza. My mum was happy when she saw the Huah Kueh because it present of luck, prosperity and wealth.

Almond Cookies

We love this almond cookies as it has the best texture and it really melt in the mouth. We added more almond nips to enhance the fragrant and the bitting of nuts make us crazy. Yummy..... friends and family always ask for more. Every Chinese New Year is always our busily days baking due to bulk orders.

Christmas in 2008

Last christmas, i was running out of idea what to buy for my friends and colleagues' christmas presents. while browsing thru my cookies recipes, i came across the gingerbread and chocolate stars. I decided to give it a try. It turned out quite nice but i have opt out of using the icing sugar for the gingerbread features due to insufficient time.

Gingerbread @ Sugabakes

Recipe - Gingerbread
-----------------------

Ingredients (A)
60g Butter
100g Sugar
pinch of salt
Ingredients (B)
1 Egg (large)
Ingredients (C)
170g Golden syrup
Ingredients (D)
460g plain flour or any purpose flour
2 tsps ginger powder
1/2 tso cinnamon powder
1 tsp Baking soda
Methods
---------
1) Mix (A) till well combined and then add in (B). Cream till smooth.
2) Add in (C) and (D) and mix till well blended.
3) Let it rest for 15 mins and roll it to a 3mm thickness and cut it into shape
4) Bake at 180 Celcuis for 15 mins or golden brown
5) after cool, you can decorate with royal icing. (optional)

Pineapple Rolls




This is my first try of baking the pineapple rolls during Chinese New Year. During the year, the tarts selling outside are expensive and their filling is not sufficient. So myself and my twin sister decided to try out by our own recipe. It turn out to be nice and it melted in the mouth.Yummy...
