Merry Christmas

Today is a Christmas Eve and every one is busy buying last minutes gifts.  As i dun like to squeeze with crowd pp, i always buy gifts earlier for my friends, colleagues and family including cookies.  This year i have decided to bake cookies with icing sugars.  The outcome doesnt good look but i will definetely try out again.  Here, i wish all of you a Merry Christmas and Happy New Year!

Fried Banana Balls

This is our family's favourite snacks.  after since i got to know how to fry this fragrant banana ball, my family always requested me to fry this for their supper.  Especially my parents and nephews, they just couldnt resist the sweet taste of the banana.  So every weekend, my mum will buy a whole bunch of ripe banana to wait for me to fry it. :)

Chocolate Banana Cake

Today is my brother's birthday. Actually my family prefer to have fruit or durian cakes for the occasion, but some how we end up buying or making a chocolate cakes.  Because our dear nephews and my children love chocolate! So to please them, i have baked this wonderful chocolate banana cake full of bananas and full of chocolate frosting.  Hope my brother will like it. HAPPY BIRTHDAY, BROTHER.

Green Tea Sable Cookies

My little princess has been pestered me to let her bake cookies since today is a weekend and she is complaining of getting bored.  Since she loves helping out with baking and to help her pass time, we decided to try this simple green tea cookies.  Its from one of my collection recipe book, name of OKASHI.  I have bought this book for quite some time but didnt get a chance to try out the recipes. We are glad that the cookies turn out great and heaven! We just couldnt stop eating it. :)

Green Tea Sable Cookies @ Sugabakes

Recipe
--------
240g Pastry Flour
15g Green Tea Powder
150g Butter
120g Icing Sugar
a pinch of Salt
2 Egg Yolks

Method
---------
1) Sift flour and green tea powder together twice. set aside.
2) Beat butter, sugar and saluntil soft and creamy.
3) Add egg yolks and mix well.  Add flour and green tea powder mixture and fold in with a spatula.
4) Preheat oven to 150c.
5) roll into a ball and flatten it and place it on a baking tray lined with greased paper.
6) Bake for 25 mins and leave to cool on a wire rack before serving.

My family and myself are craving for pineapple tarts and instead of using my old recipe, i have tried a new recipe from one of my collection recipes books.  This recipe is simple and do not need a lot of ingredients.  Some how i find that pineapple rolls are nicer than those traditional one. Chocolate Fudge Cake with Chocolate Cream - Birthday Cake

This cake was baked on last min for my sister in law's birthday.  This july was my busiest month as i have to bake numbers of cakes for friends and family member. It quite tiring and thou that i should take a break and just buy a cake for her.  But since there are still got leftover ingredients, i must well use up and end up baking a chocolate cake.  Quite disappointed with the outcome as the chocolate icing didnt turn out smooth and the sponge cake is out of shape.  To cover the "ugly" side of the cake, i added Kit Kat chocolate.  Ha.... Anyway, Hope she will like it.

Durian Birthday Cake

Today is my mum's birthday and all of us decided to treat her to a nice buffet.  She loves buffet and she always try every single foods that serve on the table.  I have specially baked her favourite durian cake for her but every of us ate too full and end up bringing back the cake for their tomorrow snacks or supper.  Happy Birthday mum!!! Birthday Cake

This is the cake that i made for my son's 7th birthday.  As he loves watching and playing football, I decided to bake a simple cake with added a pic of his favourite football club.  Since this is my first try making FBCT (frozen buttercream transfer), i did not do well making out the pic.   The mixing of colouring to buttercream are not well blended and it didnt turn out the colours that what i want. Sigh....
But i'm glad the frozen buttercream turned out just ok.
A pity after i brought the cake to my mum house, the buttercream melt and a lot of drops around the pic...Haiz... But glad the children enjoyed it!

Sweet Potato Steam Cake

Sweet Potatos has the natural sweetness and has nice fragrant smell.  My parents came from poor village and they always has sweet potato porridge for their meals. Till now sweet potatos are still their favourite snacks. The cake tastes great as it has their natural sweetness.  My children just couldnt resist it and keep asking for more.

Green Tea Chiffon Cake 2

My children has specially requested me to bake them green tea chiffon for their breakfast.  They never like soft sponge cake without any cream added.  I have baked so many type of chiffon cakes, they just dont want to eat it or ever taste it. This is my second tried baking green tea, the colour not very green thou, but i was surprised that they willing to give it a try and bingo, they love it.

Steamed Mini Pandan Cake

My father is digonised with diabetes and has to control his intake of sugars and foods.  Before time, he likes beverages and foods that contain sweetness and does not really drink much water.  After since he digonised this condition, we are very careful of what he eats and drinks.  Now his condition is under control and has since on medication. Every weekend i will visit him and bake a low sugar and healthy cakes for his supper and snacks to work.  Hope my father will maintain his condition and wish he will stay healthy and joyful.


Pandan Cake @ Sugabakes

Recipe
-------
(A)
3 eggs
150 caster sugar (*I have reduced to 120g)
1 tsp ovalette
(B)
150g self raising flour
100ml thick coconut milk (*I have replaced half with fresh milk)
1 tbsp pandan juice
few drops of vanilla essence

Method
--------
1) Whisk ingredient A until light and creamy with mixer, then add in flour, milk and the remaining ingredient B, mix well.
2) Prepare greased cup moulds, spoon in batter mixture evenly till 80% full.  Steam in preheated steamer at high heat for 10mins. 

Nyonya Kuih Mah Chee

Our family loves eating traditional kuihs.  Beside the traditional ones, we also love malays and nyonya styles of kuih kuih.  My parents use to buy for our supper or breakfast.  Till now we still love it.  This kuih mah chee was well like by everyone as it has the fragrant of the cooked grated coconut mix with brown sugar and peanuts. It not that difficult to make, just follow the recipe and you will get the fragrant mah chee for your family to try.  

Nyonya Kuih Mah Chee @ Sugabakes

Recipe
-------
Ingredients:
60g Peanuts (groundnuts) - roasted and coarsely ground
120g grated skinned coconut
86g brown sugar
1/4 tsp Salt
360g Glutinous rice flour
250ml Water
2 Tbsp, dry roasted Green bean flour

Method
--------
1) Put peanuts, grated coconut, sugar and salt in the wok and stir fry over low heat or 10 mins.
2) Sift rice flour into a bowl and add enough waterto form a soft dough. Divide into 15 portions and roll into balls.
3) Flatten each ball of dough slightly and fill with 1tsp of filling, pinch edges to seal. Roll and lightly flatten.
4) Bring a pot of water to a boil.  Drop in rice balls.
5) Remove as soon as they float to the surface.  Allow to dry a little before coating with green bean flour.

Claypot Rice

Green Tea Chiffon?? It dont seem like one, isnt it?.. I have added too little of green tea powder and it turn out to be v light in colour but the texture of the cake is fluffy and soft but it a bit of sweet side. next time will try to add more powder and reduce the sugar.  :P

Chocolate Rocher

This chocolate rocher was specially made for my dear colleagues birthday.  It easy to make as it doesnt required any baking or added any dry ingredients.  Just simply added with cornflakes and almond nips mix with melted chocolates.  Give it a try and you will sure love it.  Btw Happy birthday to my dear colleagues!

Moist Chocolate Cake with Chocolate Icing

Today is my nephew's birthday and he is already 11 years old.  Time flies, he is already a big boy.  Remember the time when he was a baby, he is so adoreable and every one likes him. He is close to me too as i have been taking care of him for a year before i got married.  Till now he is still close to me and my family. This is for him and wish him a happy 11th birthday.  Happy Birthday, Fabian!

Crunchy-top Cake

This recipe is new to me and i decided to give it a try.  The crunchy layer of sugar and the refreshing flavour from the lemon and orane zest in the cake make the taste even wonderful. The cake is buttery and its moist.


Crunchy top cake @ Sugabakes

Recipe
-------
Ingredients
250g Butter
210g Castor sugar
Orange Zest - grated from 1 orange
Lemon Zest - grated from 1 lemon
4 Eggs
240g Self Raising Flour
1Tbsp milk
60g Demerara sugar
1 Tbsp sugar

Method
--------
1) Line a 20cm cake tin with greaseproof paper.  Grease paper and set aside.
2) Cream butter and sugar until light and fluffy.  Add orange and lemon zest. Add eggs one at a time, beatig well after each addition. Sift in half the flour, then stir.  Repeat with other half. Stir in milk.
3) Spoon batter into prepared tin.  Bake in a preheated 175c oven for 25 mins.
4) Without removing cake from oven, sprinkle demerara sugar mix with 1 tbsp of sugar over the top.  Bake for another 15 mins, or until cake is done.
