Cheese Butter Cupcake

Sorry all,
It has been quite some time after since I have stopped blogging...
Recently was busy with work, family and kids studies and etc...
Hope you will continue to show us your support and here below is the Cheese Butter Cake that I have baked for my family.  The cake is moist, cheesy and buttery.. family and friends just love it...

Cheese Butter Cake
Recipe
---------
200g Butter
200g Cheese Block
1/2 tsp Salt
200g Sugar (you can lesser to 150g)
40g Powder Parmesan Cheese
4 Eggs
300g Plain Flour
1/4 tsp Baking Soda
1/2 tsp Baking Powder
120ml Fresh Milk




Method:
1) Beat Butter and cheese with sugar till fluffy and creamy.
2) Add Egg at a time to the batter and beat it well.
3) Add in the shifted dry ingredients half at a time together with milk and mix well.
4) Add in Parmesan Cheese and stir well.
5) Scoop into Cupcake paper and Bake at 175c for 25 - 30 mins.

Nutella Chocolate Cupcake

My children requested to bake them a chocolate cupcake for their school recess tomorrow.  Since they love Nutella Spread, i added Nutella to the mixture of the dark chocolate.  It turn out moist and rich. My kids just love it.

Soft Banana Cake

 My father-in-law loves Bananas.  Banana not only have vitamins but also give us energy.  So every weekly my in-law will buy a bunch of banana for my family.  Banana can turn ripe very fast, so to prevent for throwing it away, we will always try to finish up or think of ways to use up.  As the old banana are too ripe to consume (my in law has bought a new bunch of banana), i decided to bake this soft banana cake from this favourite blog, Nasi Lemak Lover http://nasilemaklover.blogspot.com. Mini Coffee and Cocoa CupCakes

To try out new recipe and to bake something nice for my childrens' breakfast, cupcakes are the best choice for my family.  Children love chocolates so i have decided to try out this this new recipe added with Coffee powder. The Coffee and cocoa mixture gave out a very nice fragrant smell.

Sweet Potato Steam Cake

Sweet Potatos has the natural sweetness and has nice fragrant smell.  My parents came from poor village and they always has sweet potato porridge for their meals. Till now sweet potatos are still their favourite snacks. The cake tastes great as it has their natural sweetness.  My children just couldnt resist it and keep asking for more.

Steamed Mini Pandan Cake

My father is digonised with diabetes and has to control his intake of sugars and foods.  Before time, he likes beverages and foods that contain sweetness and does not really drink much water.  After since he digonised this condition, we are very careful of what he eats and drinks.  Now his condition is under control and has since on medication. Every weekend i will visit him and bake a low sugar and healthy cakes for his supper and snacks to work.  Hope my father will maintain his condition and wish he will stay healthy and joyful.


Pandan Cake @ Sugabakes

Recipe
-------
(A)
3 eggs
150 caster sugar (*I have reduced to 120g)
1 tsp ovalette
(B)
150g self raising flour
100ml thick coconut milk (*I have replaced half with fresh milk)
1 tbsp pandan juice
few drops of vanilla essence

Method
--------
1) Whisk ingredient A until light and creamy with mixer, then add in flour, milk and the remaining ingredient B, mix well.
2) Prepare greased cup moulds, spoon in batter mixture evenly till 80% full.  Steam in preheated steamer at high heat for 10mins.

Chocolate Rocher

This chocolate rocher was specially made for my dear colleagues birthday.  It easy to make as it doesnt required any baking or added any dry ingredients.  Just simply added with cornflakes and almond nips mix with melted chocolates.  Give it a try and you will sure love it.  Btw Happy birthday to my dear colleagues!

Crunchy-top Cake

This recipe is new to me and i decided to give it a try.  The crunchy layer of sugar and the refreshing flavour from the lemon and orane zest in the cake make the taste even wonderful. The cake is buttery and its moist.


Crunchy top cake @ Sugabakes

Recipe
-------
Ingredients
250g Butter
210g Castor sugar
Orange Zest - grated from 1 orange
Lemon Zest - grated from 1 lemon
4 Eggs
240g Self Raising Flour
1Tbsp milk
60g Demerara sugar
1 Tbsp sugar

Method
--------
1) Line a 20cm cake tin with greaseproof paper.  Grease paper and set aside.
2) Cream butter and sugar until light and fluffy.  Add orange and lemon zest. Add eggs one at a time, beatig well after each addition. Sift in half the flour, then stir.  Repeat with other half. Stir in milk.
3) Spoon batter into prepared tin.  Bake in a preheated 175c oven for 25 mins.
4) Without removing cake from oven, sprinkle demerara sugar mix with 1 tbsp of sugar over the top.  Bake for another 15 mins, or until cake is done.

Mini Chocolate CupCake with ganache frosting

My chiildren got a class party celebration for the last day in preschool.  My son who is giong to primary 1 next year was asked to make some thing nice for his classmate and teacher.  He has suggested to buy some crackers or sweets for the class but i have suggested cupcakes instead of junk foods.  He is all right with it since i suggested to bake his favourite chocolate cupcakes.

Mini Molten Cake

This is my first try baking molten cake.  My sister has motivated me to try out this recipe as it was really a delicious classis dessert.  As it her favourite dessert, she has browsed thru a few of recipes and decided to give a try and it turn out delicious.  Especially when the cake is served warm with a scoop of vanilla ice cream.  It really a heaven...   I have baked this mini molten cupcake for my family and they just couldnt stop it. It taste good when the cake is still warm with melted chocolate.

Marble Banana Chocolate Cake

Recently  i browsed thru sonia blog (nasi lemak lover) and came across this marble banana chocolate cake.  I like the look of the marble effect and the texture of the cake.  so i decided to give it a try.  To my disappointment, i cant get the marble effect but the cake turn out delicious. Molten Cake

My favourite dessert, Molten Cake.  Bakerzin cafe serve the best molten cake and i had fell in love with it.  The chocolate melts when you have the first slice, warmth which go with vanilla ice cream.. simply  heaven and Yummy.  As it does not need much ingredients, why not i just give it a try?  The outcome really taste super nice and delicous.. muck...

Peanut and Peanut Butter Cake

Peanut Butter Cake is not common in Singapore and not many bakery shops are selling this kind of cake.  As i want to know how the taste and texture look like, I decided to give it a try.  After eaten it, i felt that the cake is too much oily but overall the taste not so bad. :)


Peanut Butter Cake @ Sugabakes


 Recipe
--------
Ingredients
250g Butter
190g soft brown sugar (you can cut down to 160g if you prefer not too sweet)
4 Eggs
150g chunky peanut butter
100g grounded peanut
100ml fresh milk
150g Plain flour
11/4 tsp baking powder

Methods:
1) Grease sides and line base of a 22cm cake tin with greased baking paper.
2) Cream butter and sugar until light and fluffy.  Beat in eggs one at a time, beating well.
3) fold in sifted dry ingredients and ground peanuts.
4) Gradually beat in milk and fold in peanut butter.
5) Bake in oven at 175c for 45-50 mins until browned and cooked through.

Kuih Bahulu

Everyone like kuih bahulu, especially when it was dipped into hot coffee. As this is my first try, the texture is a bit too spongy and hard.  getting the right texture is not that easy, you have to beat the batter till creamy and fluffy and cannot over mix.  I will definetely try out again.

Ingredients
5 large eggs
160g sugar
1 tsp vanilla essence
1 tsp baking powder
200g flour
1 tbsp cooking oil

Methods:
1) Beat the eggs and sugar till creamy and thick.
2) Add vanilla essence and mix well
3) Fold in the Flour and Baking Powder and mix well
4) Add in the cooking oil and mix well
5) brush some oil on the mould, add the batter and bake for 15min until golden brown at 200c.

Chocolate Honey Sponge Cake

When My children requested to have chocolate cake for their breakfast, i was quite relented to bake it as chocolate can be quite heaty when eaten too much.  But since they insisted and they agreed to drink plenty of fluid after that, i agreed and bake this non rich honey chocolate cake.  As this Sponge cake need to add whipped cream, i opt out of it and eat it as plain.

  Chocolate Honey Sponge Cake @ Sugabakes


Recipe
-------
Ingredients (A)
2 Tbsp Cocoa Powder - sifted
30g Butter
1 Tbsp of Honey
1/4 cup of milk
4 eggs - separated
240g sugar
1 tsp vanilla essence

Ingredients (B) - sift x 2
120g Self Raising Flour
1/4 tsp bicarbonate of soda
1/4 tsp salt
1 Tbsp Cornflour

1 cup of whipping cream - whipped

Methods
---------
1) preheat oven to 175c
2) Mix ingredients A and cook at low heat until butter melted and mixture is blended.
3) Beat egg whites until soft peak form.  Gradually add sugar, beating well after each additin until sugar dissolved. 
4) Add egg yolks one at a time unitl well mix and add in vanilla essence.
5) Fold in the ingredients B to the egg mixtures until well mix and fold in cocoa mixture.
6) Pour into greased and floured cake tin and bake for 35 to 40 mins or until cake shrinks slightly from the sides of the tin. 
7) When cold, Cut the cake into half and sandwhich and deocrate cake with whipped cream.  if desired, top with sliced fresh fruits.
