Steam banana Cupcakes

I have baked this steam cupcakes using very riped banana.  Since banana has the sweetness, i lesser the sugar intake.  The sweetness of the cake is slightly bland but the texture of the cake is soft and light.

Recipe
-------
Ingredients
2 eggs
1/4 salts
75gm sugar
1 tsp vanilla essence
100g riped banana - mashed

Butter and milk mixture
60g butter - melted and mix with 1 cup of fresh milk

Dry ingredients - sifted and mix together
240gm self raising flour
1/2 tsp baking powder
1/4 tsp baking soda

Methods
1) Cream the eggs until frothy and add in sugar, salt and essence and mix well.
2) fold in the dry ingredients alternatively with butter and milk mixutre into the batter.
3) stir in the mashed banana
4) pour into cup cake mould (greased with greaseproof paper or paper cup) and
steam for 5 - 8 mins.

Chocolate Chiffon Cake

Chiffon cake is always family's favourite as it has soft and light texture.  Baking this cake is not an easy task as it has to be just right in folding, whisking and stiring while mixing it.  Overdo or overbake can make the cake tenses, crack, sink in or whatever reasons. This is my first try and the outcome doesnt seem to be good but i would like to give it a try again.

Honey Popcorn

My children loves popcorn and whenever we passby the cinema, they will definetely ask for it. As it was costly, i dun really buy it.  making popcorn is easy and so last night i made this popcorn added with honey and melted sugar. They love it and finished the whole bowl while watching their favourite cartoon movie.

Recipe
--------
Ingredients
125gm of popcorn kernels
50g of butter
sugar to taste
2 tbsp of honey (optional)
8 Tbsp of cornoil

Methods
1) Heat oil in a wok over high heat
2) Add kernels, cover and cook, shaking the pan constantly until the kernels have popped.
3) Remove the popcorn and melt the butter in a wok and stir fry the sugar until the sugar has dissolved.
4) Add in the popcorn and stir throughly until coated. Serve

Chinese Steam Sponge cupcake

This cake is a traditional chinese sponge cake that are mainly for chinese pp to buy for praying or eat it as plain.  The texture should be light and moist but i have over steam it and ended up it a bit hard. but the texture is still great if you resteam again  and dip into coffee.

Starry X'mas Cookies

 Ho! Ho! X'mas is around the corner and every one is busy shopping with christmas gifts and baking of cookies  for their love one, colleagues and  friends. This cookies is crispy and has a wonderful cinnamon smell.  Deco with nice icing sugar gave the cookies look lively.

Kuih Bakar Jagung

This kuih was my first tempt and i never across this kuih in singapore. As i still got the balance of the cocount milk in the fridge, i decided to use it to make this soft and fragrant kuih bakar Jagung.


Kuih Bakar Jagung @ Sugabakes

Recipe
-------
Ingredients
1 can sweetcorn
240g Flour - sifted
4 Eggs - lightly beaten
2 2/3 cups of cocount milk
1 tbsp of melted butter
195g coarse sugar (you can lessen the sugar if you prefer it not to sweet)
1 tsp vanilla essence

Methods
---------
1) blend the sweet corn with little of cocount milk until fine.
2) Mix flour and sugar into mixing bowl.
3) add cocount milk little at a time into the mixture until well mix, strain the batter if there is any lumpy.
5) Add corn mixtures, eggs, butter and essence and mix well the batter.
6) pour into mould (any) and bake @ 180 celcuis at 20 - 25mins or until golden brown.

*note: To bake for 50 mins for bigger mould.
           It will sink a little after each bake.

Pandan Egg Jelly

This jelly is easy as it does not need to wait for another layer to be added when cooled.  After the jelly is cool, the cocount egg mixture will raised and it become two layer.

Recipe

Ingredients
1 packet of agar agar powder
400gm of thick cocount milk
600gm water
Sugar to taste
1 egg - lightly beaten
a few of pandan leaves
a few drop of green colouring

Methods
---------
1) Add the agar agar powder, water and pandan leave to a pot and boil it.
2) Add the sugar and stir until it dissolves.
3) Mix the egg into the cocount milk and stir well.
4) pour the cocount egg mixture into the agar agar mixture and let it boil.
5) pour into jelly mould and let it cool.  put in fridge to set.

Steam Chocolate Cake

Steaming is always a healthy choice and i have baked this chocolate cake by steaming it.  When the cake is cooked, chocolate sauces should be added, but i have chosen to eat it as plain.  It took an hour or more to steam this chocolate cake but it worth waiting as it turn out to be moist and soft.  My family love it.

Rich Chocolate Fudge Cake

Today is my nephew's birthday.  Beside making the agar agar and kuihs, we also made this simple, beautiful and rich birthday cake.  The appearance is not that wonderful but it was a great hit for the children.  We are glad that our effort didnt go on wasted.  HAPPY 6TH BIRTHDAY TO YOU, GAVIER!

Steam pandan cocount cupcakes

My children are sick of eating bread and cereal for breakfast.  As this recipe dun have much ingredients, i have made this light, soft and mosit cupcakes for their supper and breakfast .

Ingredients
120g Hong Kong Flour - sifted
3 eggs
120g castor sugar
1/2 tbsp Baking powder
1 tbsp Flour - sifted

Combine
a few drop of pandan paste or 1 tbsp of pandan juice
a few drop of green colouring
45ml Oil
125ml thin cocount milk

Methods
---------
1) Beat in eggs and sugar together until white and fluffy. 
2) Fold in the hong kong flour and baking powder and mix well
3) add combine mixture and stir until evenly and add 1 tbsp of flour.
4) Pour the batter into the mould or bowl with paper cases and
steam at high heat of boiling water for 10 - 15 mins.

Kuih Bingka Telur

This ingredients of this recipe are easy to get and bake it.  It just that the cooking time took an hour to bake it.  but it all worth it as the eggs and cocount milk gave out a nice aroma after baked.  My family just love it......

Kuih Bingka Telur @ Sugabakes

Recipe
-------
Ingredients
6 eggs - lightly beaten
270g Sugar
195g Plain Flour - sifted
30g Butter - melted
A pinch of salt
1  tsp Vanilla Essence
1 litre of cocount milk
2 drops of yellow colouring

Methods
---------
1) Line the base of 22cm square cake tin with greaseproof paper
2) Lightly stir eggs and sugar together. Add flour gradually to egg mixture and mix well
3) Stir in melted butter, salt, essence and cocount milk a little at a time
4) Add yellow colouring and strain mixture into prepared tin
5) bake in a preheated oven at 175c for 45 mins, then lower temp to 150c and bake a further 15 mins
6) Leave to cool before cutting to serve.

Cornflakes crisps

Tomorrow my son's preschool threw a small party for all the classes.  and every student has to bring a snacks for the party.  My son requested me to bake some biscuits, but due to time spare, i can only bake a simple cornflakes crisps. It crispy and the sweetness was just right.

Ingredients A
40g almond flakes
40g Raisin
20g Sesame Seeds
30g cherries (optional)
100g corn flakes

Ingredient B
30g Butter
1/2 tsp of sugar
4 tbsp of honey
a few drop of essence

Methods
---------
1) Melt butter, sugar and honey until mixture is thicker.  Add in essence and stir well.
2) Mix Ingredients A in a mixing bowl and pour the honey mixture and mix well.
3) scoop on paper case and sprinkle some colourful sweet star (optional)
4) Bake at 10 - 12 mins @ 165 celcuis until golden brown.

Banana and Chocolate Cupcakes

Last night my kids requested to hand on their own cupcakes.  Since they are always interested in baking, i agreed and let them have fun in measuring and pouring the ingredients in the mixer.  whilst adding the mixtures to the paper cases are a bit diffuclt for them, and they created a big mess all over the tray.  It great to see them that they tried and have a great fun baking it.

Sugabakes Fruits Cake

Yummy Fruits Cake.. it amazing the outcome taste so yummy, crisp on top and moist inside. All along we both dun fancy fruits cake until i tasted one of colleague's wife bake with her own recipe and to my surprise it taste so yummy. so i look out for this recipe and bake it. my nephew enjoyed so much and ask for more :-)

Kuih Seri Meka

This is my family's favourite and this is my second time making this kuihs.  The fresh cocount milk and Padan juice that extracted from pandan leaves gave out the wonderful fragrant.  The texture are just right and delicious.

Recipe
----------
Ingredients A for gultious rice
275g thin cocount milk
1/2 tsp salt
a few pandan leaves
275g of glutinous rice - soak for 4 hours

Ingredients B for pandan paste
150g thick cocount cream
pinch of salt
1 tbsp of pandan juices - extracted from pandan leaves
a few drops of green colouring
2 tbsp of plain flour
80g of castor sugars
2 eggs

Methods
---------
1) Add Ingredients A on a cake tin and steam it on big fire for 20 mins
2) Add eggs and stir it well, add all the ingredients B and mix well until sugar dissolves. Strain the batter to eliminate lumps.
3) before pouring in the paste to the rice, discard the pandan leaves and press the rice down with the back of a spoon. Steam over medium heat for 15 mins. (wipe the steamer cover)

I came across a recipe from a blog showing how to make durian jelly by using durian flesh. Since my family and colleagues love durians,  i decided to try out this recipe by added more durian flesh.  The smell of the durians was super fragrant and it taste wonderful when eaten cold.
