Lemon Shortbread

Its christmas time!  Time to bake cookies for my dear colleagues and friends.  As my family and myself just came backed from Genting, i only left a day to bake the cookies for my colleagues on the eve of christmas tomorrow.  It was a tiring day baking away but its all worthwhile after seeing my colleagues enjoying  my cookies!

Organic Soya Milk Chiffon

This is the first time i create my own recipe for this chiffon. Just using Organic Soya Milk power, brown sugar, egg white and yolk. that's it. YUMMY... fluffy, soft and taste not bad.. i'm surprised and impressed.

Mini Chocolate CupCake with ganache frosting

My chiildren got a class party celebration for the last day in preschool.  My son who is giong to primary 1 next year was asked to make some thing nice for his classmate and teacher.  He has suggested to buy some crackers or sweets for the class but i have suggested cupcakes instead of junk foods.  He is all right with it since i suggested to bake his favourite chocolate cupcakes.

Kapitan Spicy Soy Sauce Chicken

This dishes is taste so heaven, the ingredient using more in herbs and blend it into paste.. no coconut milk added just bean paste and chilli paste. It goes well with steam rice.. THUMB UP....

Mini Molten Cake

This is my first try baking molten cake.  My sister has motivated me to try out this recipe as it was really a delicious classis dessert.  As it her favourite dessert, she has browsed thru a few of recipes and decided to give a try and it turn out delicious.  Especially when the cake is served warm with a scoop of vanilla ice cream.  It really a heaven...   I have baked this mini molten cupcake for my family and they just couldnt stop it. It taste good when the cake is still warm with melted chocolate.

Green Tea Chiffon Cake

I love the taste and the smell of Green tea.  Whatever there is cakes, pastries or drinks that has green tea, i will definitely buy and try.  All the while i always wanted to bake a green tea cake or pastries but i didnt get to bake it since i dont have green tea powder.  So yesterday, while browsing thru my grocceries at supermaket, i passby a japanese dept and was delighted to find the matcha green tea powder mainly for cakes and pastries.  I bought it and decided to bake a green tea chiffon cake, mainly just for myself.

Lemon Crescent Cookies

A few more weeks and months will be Christmas day and Chinese New Year.  Every year i will be baking the same traditional cookies to give away to my family and friends.  Some how i feel like baking something new for the coming event.  So today i have tried out this new recipe added with lemon and chopped almond.  The cookies are crispy but some how i dun find it suitable for giving away. Hmm.... guess will try out another type of  new recipe :)P

Marble Banana Chocolate Cake

Longan Mousse Cake

Again, is another birthday and today is my brother's birthday.  Frankly, I was run out of ideas what to bake beside chocolate cakes.  I have been baking countless of chocolate cakes for my family members on their birthday since it is my children and nephews favourites.  But today i changed my mind and decided to bake something light and refreshing cake for my brother.  Feel a bit disappointed as the side of the cake did not coated well with the mousse cream but overall the cake taste good.  My brother and family loves it but not the kids, as it does not have their any chocolate beside the deco. :P

Molten Cake

My favourite dessert, Molten Cake.  Bakerzin cafe serve the best molten cake and i had fell in love with it.  The chocolate melts when you have the first slice, warmth which go with vanilla ice cream.. simply  heaven and Yummy.  As it does not need much ingredients, why not i just give it a try?  The outcome really taste super nice and delicous.. muck...

Rainbow Wheels

Biscuits and cookies are my son favourites.  He has been requested me to bake him cookies quite some time. But due to his prolong cough, i have rejected to his request.  After since he got a cough, he has been a good boy by trying hard not to take any sweet stuffs and drank plenty of fluid.  he never even complain of taking medicine when given.  As a mother, i feel hurt to see him suffer... so today, i broke the rule and baked this pretty colours, rainbow wheels to cheer him up.  His face brighten up and gave me a wide smile....humming away happily and enjoys his cookies.  My heart melts.... :P

recipe
-------
Ingredients
180g self raising flour
a pinch of salt
45g shortening
45g butter
90g castor sugar
1 tsp vanilla essence
1 egg - beaten
a few drop of green colouring
a few drop of orange or pink colouring

Method
1) Sift flour and salt in a bowl.  Rub in shortening and butter, then stir in sugar and essence. Bind mixture with beaten egg.
2) Divide dough into 3 equal portions.  colour one portion green and one orange; leave the third uncoloured.
3) Place each portion between lightly floured plastic sheets.  Roll into rectangles.
4) Remove plastic sheets and stack dough rectangles together, with the uncoloured rectangle sandwhiched in the middle.  roll up and place in the freezer for 10 mins before cutting into 0.5cm thick slices.
5) Bake in a preheated 175c oven for 15-20 mins until light golden.

Raisin Truffle Cake

Today is my younger nephew's 8th birthday.  Since he loves chocolate and raisins, and i have only few hours to get prepare and bake,  i decided on truffle cake added with raisins.  This truffle cake is much easier than those cream cakes that need to whip and cream on it.  To make the cake look much more attractive, i have added chocolate wafer sticks around the cake. Hope my nephew will like it.  Happy Birthday, Javier!

Rainbow Chiffon Cake

I came across a recipe of rainbow chiffon cake from kitchen snippets.  The Colourful of the chiffon really amazed me and i decided to give a try.  As i didnt have big tub pan, i cut down the recipe to half.  I am happy that the outcome turn out beautifully! Do try out and I'm sure your family will love it.  Recipe here

strawberry Cheese Cake

My colleague requested me to bake a small strawberry cheesecake for her friend's birthday.  As her friend likes hello kitty, i put on hello kitty figure and added pink colouring to the jelly.  The pink jelly is far too dark and the fruits that decorated on top cant be seen.  But at least it turn out not so bad lar. :P

Eggless Pineapple Tart

My girl has been pestered me for the pass few days to bake her pineapple tart as she is craving for it. Since i still have the leftover paste, i agreed to her request to bake some pineapple tart but without using any egg.  This version of tarts are much healthier than those tart that added eggs.  My girl and my boy just love it and keep asking for more and requested to bring some to school tomorrow.

White Almond Cookies

Just want to try something new and simple cookies recipe for my family and colleagues. After browsing thru a few of my recipe books, i came across this simple white almond cookies.  The ingredients do not need a lot and there is no butter or eggs added, so i went ahead and try it out.  My family and colleagues just couldnt resist of the crispy and melt into mouth texture and keep asking for more.  My rate for this cookies: 4 stars!

 White Almond Cookies @ Sugabakes
Recipe
-------
Ingredients
120g shortening
60g icing sugar
80g cornflour
120g plain flour
1/4 salt

Method:
1) Preheat oven at 160c and line the tray with grease paper.
2) Mix shortening, sugar and salt until fluffy.
3) Add in sifted flours and mix well.
4) Roll the dough and use round cutter to cut out or use hand to roll into ball.
5) Bake for 20 mins.

Chocolate Chip Cookies

After since Chinese New Year, i hardly bake any cookies for my family.  Since i have a box of chocolate chips that i have just bought it not long ago, i decided to try baking this simple recipe using chocolate chips for my family.

 Chocolate Chips @ Sugabakes

Recipe
---------
Ingredients (A)
150g Butter
200g Brown Sugar
50g Caster Sugar
2 eggs
1 tsp vanilla extract
200g chocolate chips
100g any type of nuts (optional)

Ingredients (B) - Sift together
375g Plain flour
1 tsp B. soda

Methods:
1) Line the tray with grease paper.  Preheat oven @ 190c
2) Put in butter, brown sugar and sugar into mixing bowl.  beat until well mix.
3) add in egg one at a time and mix well
4) fold in ingredients(B) and mix in chocolate chips and nuts (optional)
5) drop a tbsp of the batter on the tray and bake for 15 - 20 mins till golden brown.
6) Leave the cookies on the tray for 10 mins.
7) remove and put on the wire rack to cool.  Store in container.

Nicole's Birthday Cake

Last month my girl requested me to bake her a Hello Kitty Cake on her birthday.  So i bought a plastic HK figure to put on the cake.  But on the very day, the cake didn't turn out very good.  I have over whipped the cream and the texture become very soggy and it quite difficult for me to spread the cream onto the cake.  I was quite disappointed with the outcome but managed to camouflage it.  :(

Yam Chiffon Cake

Yam or Taro are my favourites.  Either foods, pastries or kuih that contains Yam or paste, i will surely buy and try. Jowen's 6th Birthday Cake

Star Wars are my husband's favourite movie show and it has influenced my son.  He knows all the star wars characters and has been watching the movie over and over again.  Tomorrow is my son's birthday and i have promised him to make a cake with his favourite star wars characters and has requested to celebrate at grandma's house with all the nephews .  He just couldn't stop smiling when every one is helping out putting on the candles and singing HB songs to him.  My beloved son, Happy Birthday to you!

Strawberry Chiffon Cake

Bought a box of strawberries and decided to bake strawberry chiffon cake.  The Cake turn out delicious, fluffy and soft. especially the sweetness from the fruits itself.

Vanilla Heart

This butter cookies are especially made for my princess.  She like helping out and making of cookies.  With some helps, she manage to finish it. And my children just love the rich butter cookies.

Recipe
-------
225g Plain Flour - sifted
150g butter - cut into cubes
1 tsp of vanilla essence
120g of caster sugar

Methods:
1) Mix plain flour with butter until it resemble of breadcrumbs. 
2) Add in sugar and vanilla and mix well till soft dough is form.
3) roll the dough and cut with cookies cutter.
4) Bake in oven of 180c for 15 - 20 mins till golden brown.

Peanut and Peanut Butter Cake

Peanut Butter Cake is not common in Singapore and not many bakery shops are selling this kind of cake.  As i want to know how the taste and texture look like, I decided to give it a try.  After eaten it, i felt that the cake is too much oily but overall the taste not so bad. :)

Ingredients
250g Butter
190g soft brown sugar (you can cut down to 160g if you prefer not too sweet)
4 Eggs
150g chunky peanut butter
100g grounded peanut
100ml fresh milk
150g Plain flour
11/4 tsp baking powder

Methods:
1) Grease sides and line base of a 22cm cake tin with greased baking paper.
2) Cream butter and sugar until light and fluffy.  Beat in eggs one at a time, beating well.
3) fold in sifted dry ingredients and ground peanuts.
4) Gradually beat in milk and fold in peanut butter.
5) Bake in oven at 175c for 45-50 mins until browned and cooked through.

Mini Nonya Dumpling

Again, Dumpling day is around the corner.  Every one is busy cooking and making of dumplings and outside is selling like hotcake. I have tried making of Plain Alkaine Dumpling but has yet to try making nonya dumplings.  As it need skill to make nice filling and wrapping, i give it a shot and after many try of wrapping, i finally get the right shape. Yahoo.... but I have over boiled it and turn out the rice too soft and wet. :(

Kuih Bahulu

Everyone like kuih bahulu, especially when it was dipped into hot coffee. As this is my first try, the texture is a bit too spongy and hard.  getting the right texture is not that easy, you have to beat the batter till creamy and fluffy and cannot over mix.  I will definetely try out again.

5 large eggs
160g sugar
1 tsp vanilla essence
1 tsp baking powder
200g flour
1 tbsp cooking oil

Methods:
1) Beat the eggs and sugar till creamy and thick.
2) Add vanilla essence and mix well
3) Fold in the Flour and Baking Powder and mix well
4) Add in the cooking oil and mix well
5) brush some oil on the mould, add the batter and bake for 15min until golden brown at 200c.

Chocolate Honey Sponge Cake

When My children requested to have chocolate cake for their breakfast, i was quite relented to bake it as chocolate can be quite heaty when eaten too much.  But since they insisted and they agreed to drink plenty of fluid after that, i agreed and bake this non rich honey chocolate cake.  As this Sponge cake need to add whipped cream, i opt out of it and eat it as plain.

Ingredients (A)
2 Tbsp Cocoa Powder - sifted
30g Butter
1 Tbsp of Honey
1/4 cup of milk
4 eggs - separated
240g sugar
1 tsp vanilla essence

Ingredients (B) - sift x 2
120g Self Raising Flour
1/4 tsp bicarbonate of soda
1/4 tsp salt
1 Tbsp Cornflour

1 cup of whipping cream - whipped

Methods
---------
1) preheat oven to 175c
2) Mix ingredients A and cook at low heat until butter melted and mixture is blended.
3) Beat egg whites until soft peak form.  Gradually add sugar, beating well after each additin until sugar dissolved. 
4) Add egg yolks one at a time unitl well mix and add in vanilla essence.
5) Fold in the ingredients B to the egg mixtures until well mix and fold in cocoa mixture.
6) Pour into greased and floured cake tin and bake for 35 to 40 mins or until cake shrinks slightly from the sides of the tin. 
7) When cold, Cut the cake into half and sandwhich and deocrate cake with whipped cream.  if desired, top with sliced fresh fruits.

Gula Melaka Agar Agar

This agar agar really taste great as it has the taste of cendol dessert.  I have used the same recipe as my egg pandan jelly.  Just replace the sugar to gula melaka.

Pandan Egg Tarts

This is my second try making of egg tarts.  But this time i have added pandan juice and essence to the egg custard.  The tarts give out a very strong and fragrant smell of pandan while it was baking.  Its really taste good and my family just love it.  However, i need to improve the shape of the pastry, it doesnt turn out great. :(

Fudge Cake

We love this cake as it has soft and light texture. The cake can eat it as plain or coated with whipped cream or hot chocolate fudge.  As we dun really fancy in rich chocolate cake, this fudge cake is just right for my family.

Recipe
-------
Ingredients (A)
90g Butter
225g Castor Sugar
1 Tbsp Vanilla Essence
2 Eggs - ligthly beaten
220g Yogurt or sour cream

Ingredients (B) - Combined
40g Cocoa Powder
80g Hot Water

Ingredients (C)
200g Flour
Half (1/2) Tbsp Baking Soda
A pinch of Salt

Method
--------
1) Mix (A) until light and creamy.
2) Add eggs one third at a time and mix well
3) Stir in Cocoa mixtures and beat until well combine.
4) Fold in (C) together with yogurt half at a time until well mix.
5) Pour into 19" Cake Tin and bake for 40 mins @ 175C

Kaya Chiffon Cake

Left my handmade Kaya Jam in the fridge.. immediately tot of baking chiffon cake with the jam. keep my finger cross as this is my first trial... As Kaya ingredients have pandan juice and coconut milk.. i just cut down the sugar.. It turn out so fluffy and taste so YUMMY... i'm surprised and happy. my family simply love it.

Pig Trotter with Black Vinegar

VINGEAR PIG TROTTER... actually this is not my first time to cook this dish.. i fell in love with this dish during my confinement day for the past 7 years ago.. from that day onwards, i learnt to cook.. now every few month i will surely cook for my family. the gravy can be drinkable itself .. it so yum and also good for health too..
