Christmas Spices Cookies


This was especially baked for my colleagues as a christmas gift goodies.  This cookies are added with spices and it smell fragrant after it was baked.  All of us just love it.  Anyway wish everyone a Merry Christmas in 2013!

Spices Cookies @ Sugabakes
Give it a try.. you wont be disappointed.

Recipe
---------
125 butter - cut into cubes
125g Brown Sugar
11/2 tsp spices powder
1 egg - lightly beaten
a little of water
1 tsp of Baking Powder
225g Self Raising Flour

Method:
----------
1) Mix spices powder, flour and baking powder in a mixing bowl.
2) Add in brown sugar and mix well
3) Add in butter, knead and add in egg and mix well
4) put in the fridge for an hour till stiff
5) roll the dough and cut into any shape of the cutter. Bake in oven for 15-20 mins @ 190c
6) let it cool and keep in a air tight container.

Merry Christmas

Today is a Christmas Eve and every one is busy buying last minutes gifts.  As i dun like to squeeze with crowd pp, i always buy gifts earlier for my friends, colleagues and family including cookies.  This year i have decided to bake cookies with icing sugars.  The outcome doesnt good look but i will definetely try out again.  Here, i wish all of you a Merry Christmas and Happy New Year!

Green Tea Sable Cookies

My little princess has been pestered me to let her bake cookies since today is a weekend and she is complaining of getting bored.  Since she loves helping out with baking and to help her pass time, we decided to try this simple green tea cookies.  Its from one of my collection recipe book, name of OKASHI.  I have bought this book for quite some time but didnt get a chance to try out the recipes. We are glad that the cookies turn out great and heaven! We just couldnt stop eating it. :)

Green Tea Sable Cookies @ Sugabakes

Recipe
--------
240g Pastry Flour
15g Green Tea Powder
150g Butter
120g Icing Sugar
a pinch of Salt
2 Egg Yolks

Method
---------
1) Sift flour and green tea powder together twice. set aside.
2) Beat butter, sugar and saluntil soft and creamy.
3) Add egg yolks and mix well.  Add flour and green tea powder mixture and fold in with a spatula.
4) Preheat oven to 150c.
5) roll into a ball and flatten it and place it on a baking tray lined with greased paper.
6) Bake for 25 mins and leave to cool on a wire rack before serving.

Pineapple Roll

My family and myself are craving for pineapple tarts and instead of using my old recipe, i have tried a new recipe from one of my collection recipes books.  This recipe is simple and do not need a lot of ingredients.  Some how i find that pineapple rolls are nicer than those traditional one. As my family prefer to have more pastry than the paste. We enjoy ourselves v much...

Lemon Shortbread

Its christmas time!  Time to bake cookies for my dear colleagues and friends.  As my family and myself just came backed from Genting, i only left a day to bake the cookies for my colleagues on the eve of christmas tomorrow.  It was a tiring day baking away but its all worthwhile after seeing my colleagues enjoying  my cookies!

Lemon Crescent Cookies

A few more weeks and months will be Christmas day and Chinese New Year.  Every year i will be baking the same traditional cookies to give away to my family and friends.  Some how i feel like baking something new for the coming event.  So today i have tried out this new recipe added with lemon and chopped almond.  The cookies are crispy but some how i dun find it suitable for giving away. Hmm.... guess will try out another type of  new recipe :)P

Rainbow Wheels

Biscuits and cookies are my son favourites.  He has been requested me to bake him cookies quite some time. But due to his prolong cough, i have rejected to his request.  After since he got a cough, he has been a good boy by trying hard not to take any sweet stuffs and drank plenty of fluid.  he never even complain of taking medicine when given.  As a mother, i feel hurt to see him suffer... so today, i broke the rule and baked this pretty colours, rainbow wheels to cheer him up.  His face brighten up and gave me a wide smile....humming away happily and enjoys his cookies.  My heart melts.... :P

recipe
-------
Ingredients
180g self raising flour
a pinch of salt
45g shortening
45g butter
90g castor sugar
1 tsp vanilla essence
1 egg - beaten
a few drop of green colouring
a few drop of orange or pink colouring

Method
1) Sift flour and salt in a bowl.  Rub in shortening and butter, then stir in sugar and essence. Bind mixture with beaten egg.
2) Divide dough into 3 equal portions.  colour one portion green and one orange; leave the third uncoloured.
3) Place each portion between lightly floured plastic sheets.  Roll into rectangles.
4) Remove plastic sheets and stack dough rectangles together, with the uncoloured rectangle sandwhiched in the middle.  roll up and place in the freezer for 10 mins before cutting into 0.5cm thick slices.
5) Bake in a preheated 175c oven for 15-20 mins until light golden.

Eggless Pineapple Tart

My girl has been pestered me for the pass few days to bake her pineapple tart as she is craving for it. Since i still have the leftover paste, i agreed to her request to bake some pineapple tart but without using any egg.  This version of tarts are much healthier than those tart that added eggs.  My girl and my boy just love it and keep asking for more and requested to bring some to school tomorrow.

White Almond Cookies

Just want to try something new and simple cookies recipe for my family and colleagues. After browsing thru a few of my recipe books, i came across this simple white almond cookies.  The ingredients do not need a lot and there is no butter or eggs added, so i went ahead and try it out.  My family and colleagues just couldnt resist of the crispy and melt into mouth texture and keep asking for more.  My rate for this cookies: 4 stars!

 White Almond Cookies @ Sugabakes
Recipe
-------
Ingredients
120g shortening
60g icing sugar
80g cornflour
120g plain flour
1/4 salt

Method:
1) Preheat oven at 160c and line the tray with grease paper.
2) Mix shortening, sugar and salt until fluffy.
3) Add in sifted flours and mix well.
4) Roll the dough and use round cutter to cut out or use hand to roll into ball.
5) Bake for 20 mins.

Chocolate Chip Cookies

After since Chinese New Year, i hardly bake any cookies for my family.  Since i have a box of chocolate chips that i have just bought it not long ago, i decided to try baking this simple recipe using chocolate chips for my family.

 Chocolate Chips @ Sugabakes

Recipe
---------
Ingredients (A)
150g Butter
200g Brown Sugar
50g Caster Sugar
2 eggs
1 tsp vanilla extract
200g chocolate chips
100g any type of nuts (optional)

Ingredients (B) - Sift together
375g Plain flour
1 tsp B. soda

Methods:
1) Line the tray with grease paper.  Preheat oven @ 190c
2) Put in butter, brown sugar and sugar into mixing bowl.  beat until well mix.
3) add in egg one at a time and mix well
4) fold in ingredients(B) and mix in chocolate chips and nuts (optional)
5) drop a tbsp of the batter on the tray and bake for 15 - 20 mins till golden brown.
6) Leave the cookies on the tray for 10 mins.
7) remove and put on the wire rack to cool.  Store in container.

Vanilla Heart

This butter cookies are especially made for my princess.  She like helping out and making of cookies.  With some helps, she manage to finish it. And my children just love the rich butter cookies.

Recipe
-------
225g Plain Flour - sifted
150g butter - cut into cubes
1 tsp of vanilla essence
120g of caster sugar

Methods:
1) Mix plain flour with butter until it resemble of breadcrumbs. 
2) Add in sugar and vanilla and mix well till soft dough is form.
3) roll the dough and cut with cookies cutter.
4) Bake in oven of 180c for 15 - 20 mins till golden brown.

Orange Cornflakes Cookies

My children requested again to bake their own cookies.  As to pass time, i agreed and let them have fun weighing the ingredients and kneading the dough.  This orange cornflakes cookies are easy to make and it has orange fragrant and crispy crashed cornflakes.  My children enjoy eating it and requested to bring some to school for their tea break.

Chinese New Year Cookies

Chinese new year is around the corner and every one is busy doing spring cleaning, shopping and baking cookies. This year was my busier day, I have a bulk of orders of tarts and other cookies from friends and relatives. It quite tiring as I have to spend the whole days in kitchen, baking and baking...
But it worth the effort as all the cookies are hand made by me and most important my friends and family like it.  Here, i wish every one a Happy and prosperity 2010 year!! Gong Xi, Gong Xi.....

Kueh Makmur

My colleague requested me to bake kueh makmur for chinese new year festival. and i agreed to give it a try.  I have used the same ingredients of my pineapple tart recipe to make a soft dough and added a teaspoon of roasted peanuts given by my colleague.  But I have opt out making the design of a leaves as i want to try it plain.  I was glad that the cookies turn out nice and fragrant. Yummy....

3D Hello Kiddy Butter Cookies

My colleague bought this 3D Hello Kitty cutter and requested me to bake cookies by using this cutter especially for her daugther's friends and classmates on her birthday party.  This is my first try and was quite excited to try it out   I am not sure how much thickness to cut out th image and the outcome doesnt look good but at least i got to understand it and will bake a nicer image out.

My girl requested me to make dough for her to play by using her nice cookies cutter and decorated it with their features.  With my caregiver helps, she managed to finish all the dough but did not complete decorating it as she is eager to wash up my bakewares (so that she can play with water too)...

Honey Popcorn

My children loves popcorn and whenever we passby the cinema, they will definetely ask for it. As it was costly, i dun really buy it.  making popcorn is easy and so last night i made this popcorn added with honey and melted sugar. They love it and finished the whole bowl while watching their favourite cartoon movie.

Recipe
--------
Ingredients
125gm of popcorn kernels
50g of butter
sugar to taste
2 tbsp of honey (optional)
8 Tbsp of cornoil

Methods
1) Heat oil in a wok over high heat
2) Add kernels, cover and cook, shaking the pan constantly until the kernels have popped.
3) Remove the popcorn and melt the butter in a wok and stir fry the sugar until the sugar has dissolved.
4) Add in the popcorn and stir throughly until coated. Serve
