Christmas Spices Cookies


This was especially baked for my colleagues as a christmas gift goodies.  This cookies are added with spices and it smell fragrant after it was baked.  All of us just love it.  Anyway wish everyone a Merry Christmas in 2013!

Spices Cookies @ Sugabakes
Give it a try.. you wont be disappointed.

Recipe
---------
125 butter - cut into cubes
125g Brown Sugar
11/2 tsp spices powder
1 egg - lightly beaten
a little of water
1 tsp of Baking Powder
225g Self Raising Flour

Method:
----------
1) Mix spices powder, flour and baking powder in a mixing bowl.
2) Add in brown sugar and mix well
3) Add in butter, knead and add in egg and mix well
4) put in the fridge for an hour till stiff
5) roll the dough and cut into any shape of the cutter. Bake in oven for 15-20 mins @ 190c
6) let it cool and keep in a air tight container.

Birthday Cake - Mango Cake

Today is my dear brother's birthday.  As I was running out of idea what to bake, my sister has agreed to bake one for him. But later changed her mind as she do not have much ingredients at home and also no idea of what to bake.  No choice I have to take over the work.  I browsed thru baking books and website for some ideas and decided to add sponge fingers around the mango cake (from one of the food blog).  I am not sure how the taste will be like but went ahead to bake it.  My brother was delighted and gave me a pat on my shoulder and thanks me for the effort.  :) The outcome....not so good... my brother commented that the sponge fingers and nuts should be omitted as it does not taste fantastic.  Hmm.... Anyway Happy Birthday to my dear Brother!

Non-Baked Oreo Cheesecake

I have been making snacks and desserts over the weeks for my colleagues for their teabreaks and they enjoyed themselves very much.  As there is a block of cheese in my fridge, i decided to make a non-baked oreo cheesecake. I do not have any recipe on hand and baked by my estimation and placed in mini container than in cake tin.  The cheesecake is good with lots of oreo pieces inside. Yummy...

Non baked Oreo Cheesecake @ Sugabakes


Recipe
250g of cheese
50g of sugar
120g - 150g whipped cream
1 tsp lemon juice
half tbsp gelatine
3 tbsp hot water
some crushed oreo
a few pieces of oreo cookies to be place on top of the cheesecake

base
80g - 100g oreo cookies - crushed
30g - 40g melted butter

method
1) mix the melted butter with crushed oreo cookies and put in fridge to let it set
2) whip up the whipping cream till stiff and put in fridge till set
3) beat the cheese and sugar till fluffy and creamy.  Add in lemon juice and mix well
4) meanwhile, add hot water in gelatine and stir till dissolve.
5) fold in whipped cream in the cheese mixture
6) stir in gelatine mixture and crushed oreo.  Mix well
7) pour into cake tin or container, add cookies on top and put in fridge to let it set for hours.

This is my favourite prawn dumplings.  It was a frozen packing bought from supermarket. The prawns are sweets and fresh. The pkt powder that was given inside the packet was also taste great. sorry, forgot what is the brand.  will check it out and update :)

Soft Beancurd Pudding

After since i have tried the famous soft beancurd pudding, I always wanted to buy more for myself and my family.  The sweetness is just right and its firm.  I have browsed through a lot of food bloggers making it and was surprised that it does not need much ingredients.  Just need soya bean milk, sugar, jelly powder and creamer.  So i decided to give it a try and it turn out soft, fluffy and yummy.  Thanks to bloggers for the nice recipes.  But compare to those shop selling it, they are still the best. :)

Huat Kuehs

This morning, i went to wet market and came across this packet of instant huat kueh from one of the shop.  I was curious to know how the taste would be like and decided to buy one to try out.  It does not need any sugar or other ingredients, just eggs and water (can be substitute with cocount milk) and blend it together. The cake rises beautifully and fluffy but disappointed as it not smell fragrant and sweet enough.  If i gonna to try again, i will definetely add melted butter and extra sugar to the batter.

Mango Yogurt Cake

I have alot of friends and family birthday fall on this month.  Last week is my son birthday and this week is my mum birthday and next week will be my girl turn.  I have been busy baking away cakes until i had ran out of ideas of what to bake. Ha ha ha...
I have decided to bake my mum a Mango Yogurt Cake.  This cake was well like by youngs and olds.  As this month is not mango season, I cant manage to buy nice and sweet ones.  Quite disappointed, but the cake still turns out fine and every member of my family ate it all without leaving a slice for me. :(  Anyway I 'm glad that they had enjoyed it!  Thanks rei (All that matters blog) for the recipe.  you may browse the recipe here. mango mousse cake .

Chocolate Banana Cake

Today is my son, jowen's 8th birthday.  He has requested me to bake him a chocolate cake with his favourite football club.  Decorate a FC logo is not an easy task, as it need patience and time to deco out a FC logo.  As I dont have much time to do it, I decided to deco it with some FC badges and his favourite soccer player. It took me one whole afternoon to look for the figurine. When my son saw his cake, he got a shock and gave me a broad smile.  :)

Recently I have been baking cakes and kuehs for my parents who are resting at home due to their eyes surgery and my two childrens who are having their school holiday.  Each days i have to think of what to make or buy for my kids for their breakfast if not they will complaint of eating breads, eggs and buns always. To make sure they have different kind of breakfast to eat everyday, i have baked the following cakes (not shown all) for them. keke...

Soft Banana Cake

 My father-in-law loves Bananas.  Banana not only have vitamins but also give us energy.  So every weekly my in-law will buy a bunch of banana for my family.  Banana can turn ripe very fast, so to prevent for throwing it away, we will always try to finish up or think of ways to use up.  As the old banana are too ripe to consume (my in law has bought a new bunch of banana), i decided to bake this soft banana cake from this favourite blog, Nasi Lemak Lover http://nasilemaklover.blogspot.com. Mini Coffee and Cocoa CupCakes

To try out new recipe and to bake something nice for my childrens' breakfast, cupcakes are the best choice for my family.  Children love chocolates so i have decided to try out this this new recipe added with Coffee powder. The Coffee and cocoa mixture gave out a very nice fragrant smell.

Sweet potato Onde Onde (2)

This great favourite is also known as Kuih Buah Melaka was well like by everyone including my family.  Nowadays want to find a nice and soft onde onde are not that easy and it can be quite costly. One box of 6 onde onde can easily cost as much as $2 - $3.  Since my family and myself love it so much, i decided to make this ever soft onde onde for them.  We can eat as much as we can  :)


Sweet Potato Onde Onde @ Sugabakes


Recipe:
Ingredients
250g peeled sweet potato
350g glutinous rice flour
1/4 salt
150g Gula Melaka (chopped)
1/2 grated white coconut mixed with pinch of salt

Method:
1) Steam sweet potato for 15 mins until soft.  Mash well while still hot.
2) Sift glutinous rice and add enough water to bind into a ball of dough. 
3) Add mashed sweet potato and knead well.
4) divide into walnut-size portions.  Roll each into a round ball
5) Fill in a tsp of chopped sugar and seal well
6) Drop into boiling water and as soon as it float, remove it.
7) Roll in grated coconut mixed with salt.  (to keep grated coconut still fresh, steam it for 5 mins before using it).

Happy 2012 New Year
